做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在(zài )锅(guō )上擦一(yī )遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料(liào ),武(wǔ )火煮沸,转中小火煲一个(gè )半小(xiǎo )时,下盐(yán )调味即可(kě )品尝。
