做法:春笋切成(chéng )片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后(hòu )转(zhuǎn )中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅(guō )盖焖。
