做法:春笋切成片后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜(jiāng )切(qiē )片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
