做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再(zài )加(jiā )入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后(hòu )转(zhuǎn )中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
