做法(fǎ ):洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软(ruǎn ),拍裂一小块姜,热(rè )锅,用姜块在锅(guō )上擦一遍,放两勺油,待油六成热下鱼(yú ),煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其(qí )他材(cái )料,武火煮沸(fèi ),转(zhuǎn )中小火煲一个半小(xiǎo )时,下盐调(diào )味即可品尝。
