做法:洗(xǐ )净宰(zǎi )好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅上擦(cā )一遍,放两勺油,待油六成热(rè )下(xià )鱼(yú ),煎至微(wēi )黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其他材(cái )料,武火(huǒ )煮沸,转(zhuǎn )中小火(huǒ )煲一个半小时(shí ),下盐调(diào )味即可品(pǐn )尝。
