做法:洗净宰好鲫鱼,洗(xǐ )净淮山(shān )和薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一小(xiǎo )块姜(jiāng ),热(rè )锅(guō ),用姜块在锅上擦一(yī )遍,放两勺油,待油六成(chéng )热下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼(yú )和其他材料,武火煮沸,转中小火煲一个半(bàn )小时(shí ),下盐调味即可品尝。
