做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用(yòng )清水把陈皮泡软,拍裂(liè )一小块姜,热锅,用姜(jiāng )块在(zài )锅上擦一遍(biàn ),放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮好的鲫鱼和其他材料,武火(huǒ )煮沸,转中(zhōng )小火煲(bāo )一(yī )个半小时,下盐调味即(jí )可品尝。
