做法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入生(shēng )抽、老抽(chōu )、蚝油翻(fān )炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住(zhù )春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
